Chicken Spinach Frittata

Ingredients

2 lbs. NatureRaised Farms Boneless Skinless Chicken Breasts, diced
1 tablespoon vegetable oil
1 cup sliced mushrooms
1 cup hand-torn fresh spinach
4 eggs
1 cup shredded parmesan cheese, divided
½ cup milk
To taste kosher salt and ground black pepper
¼ cup sliced green onions

Instructions

  1. Preheat oven at 400°F.
  2. Heat oil in a cast iron or large oven-safe skillet over medium heat. Cook the chicken for 12-15 minutes, flipping often. Add the mushrooms and spinach and cook for an additional 2-3 minutes.
  3. While cooking the chicken, whisk the eggs in a mixing bowl with ½ cup of cheese, milk, salt and pepper. Pour the mixture over the chicken and vegetables. Sprinkle the remaining cheese on the top and bake for 12-15 minutes. Finish with the green onions; slice and serve.
