Brown Buttered Chicken Pasta

4 NatureRaised Farms® Individually Frozen Boneless Skinless Chicken Breasts Portions (4-ounces each), thawed, large diced
2 sticks unsalted butter (1 cup)
¼ cup fresh chopped sage
2 tablespoons maple syrup
1 tablespoon Kosher salt
2 tablespoons coconut oil
1 (12-ounces) bag precut butternut squash or 1 small butternut squash, large diced
4 ounces dried gluten-free spaghetti (3 cups cooked)
3 cups packed baby kale
- In a small saucepan, heat butter over medium-low heat for 15 to 20 minutes. The milk solids will separate and turn brown; remove from heat once browning begins. Strain through a fine strainer into a clean bowl and stir in sage, maple syrup and salt.
- In a large skillet, heat oil over medium-high heat. Place chicken in skillet and sear on all sides for 10 minutes until chicken starts browning. Stir in squash and cook for an additional 10 minutes. Toss the pasta, kale and seasoned brown butter in the skillet and continue heating for an additional 5 minutes or until the chicken reaches an internal temperature of 170°F.
