1/4 Cup Shaved Parmesan

Directions

  1. Heat oven to 375°F. Toss bread cubes with avocado oil, salt, pepper, and garlic powder until evenly coated.
  2. Spread the bread cubes in a single layer on a sheet pan. Bake for 12–15 minutes, stirring once halfway through, until golden brown and crisp. Set aside to cool slightly.
  3. Preheat an air fryer to 360°F. Place the chicken bites in the basket in a single layer and cook for 10–12 minutes, turning halfway through, until heated through and crispy.
  4. While the chicken cooks, combine the romaine and baby kale in a large bowl. Add the Caesar dressing and lemon juice; toss until evenly coated.
  5. Add the cooked chicken to the dressed greens and gently toss to combine.
  6. Divide the chicken Caesar mixture evenly among the four tortillas, placing the filling in the center of each tortilla.
  7. Top each tortilla with 1 tablespoon shaved Parmesan and ½ cup croutons, using all of the prepared croutons.
  8. Fold in the sides of each tortilla and roll tightly into a wrap.
  9. Heat a griddle or large skillet over medium heat. Place the wraps seam-side down and cook for 2–3 minutes, turning once, until lightly browned and warmed through.
