2 tablespoons vegetable oil
1 tablespoon prepared Cajun seasoning
3 cups unsalted chicken stock, divided
1 green bell pepper, diced
½ yellow onion, diced
1 (12 ounce) package Aidells Chorizo Sausage, sliced into coins
¼ cup unsalted butter
1 tablespoon minced garlic
1 cup rice
- Heat oil in a large skillet over medium heat. Season the chicken with the Cajun seasoning and cook in the skillet for 15-20 minutes. Pour in one cup of chicken stock into the skillet. Add the peppers, onions and sausage; cook for an additional 5 minutes. Stir in the butter and garlic, cook for an additional 5 minutes.
- While cooking the chicken and vegetables; cook the rice with the remaining chicken stock, according to the package instructions. Serve with the chicken jambalaya.
