Chicken Pita Bites
1 ½ lbs. NatureRaised Farms® Boneless Skinless Chicken Thighs
½ teaspoon lemon pepper seasoning
1 teaspoon kosher salt
½ teaspoon dried oregano
1 tablespoon minced garlic
½ cup diced yellow onions
¼ cup unsalted chicken stock
2 loaves pita bread
- Place the chicken into a slow cooker and season with lemon pepper seasoning, salt and oregano. Add the garlic, onions and stock. Cook on high for 3-4 hours or low for 7-8 hours. Shred the chicken using two forks.
- Preheat oven or toaster oven to 375°F. Slice the pita loaves into 8 pieces per loaf. Place them on a baking pan and toast in the oven for 2-3 minutes. Serve with the chicken atop each pita piece. Garnish with paprika or your favorite feta cheese.
