Chicken Spinach Frittata
2 lbs. NatureRaised Farms® Grilled Chicken Breast Strips, diced
1 tablespoon vegetable oil
1 cup sliced mushrooms
1 cup hand-torn fresh spinach
1 cup shredded parmesan cheese, divided
½ cup milk
To taste kosher salt and ground black pepper
¼ cup sliced green onions
- Preheat oven at 400°F.
- Heat oil in a cast iron or large oven-safe skillet over medium heat. Cook the chicken for 12-15 minutes, flipping often. Add the mushrooms and spinach and cook for an additional 2-3 minutes.
- While cooking the chicken, whisk the eggs in a mixing bowl with ½ cup of cheese, milk, salt and pepper. Pour the mixture over the chicken and vegetables. Sprinkle the remaining cheese on the top and bake for 12-15 minutes. Finish with the green onions; slice and serve.
