Holiday Loaded Sweet Potato Skins

1 (12 ounce) bag NatureRaised Farms® Grilled Chicken Breast Strips
1 (1.5 lbs.) bag petite sweet potatoes
1 ½ cup chopped fresh spinach
¼ cup crumbled goat cheese
1 cup prepared cranberry sauce
- Prepare the chicken according to package instructions.
- Cook the potatoes to your liking in a microwave, oven or stovetop. Cut the potatoes in half and scoop out part of the centers in each half. Stuff with potato skins with spinach and chicken. Top with cheese and place into a baking dish.
- Heat the oven at 425°F. Place the dish with the potatoes into the oven and heat for 15 minutes. Heat the sauce and pour over the top of the potato skins and enjoy.
